Stir fried Baked Tofu Cakes, simply delicious

Baked Tofu Cakes

Tofu gets a bad rep all the time. All. The. Time. At times, this is not without just cause. Serving the stuff right out of the package wouldn't entice me, most of the time.

The following, where the main star is baked tofu cakes, has been a favorite since I was a small child.

Ingredients:
  • baked tofu, pictured below - 3 packages:

  • a little olive oil
  • 3 garlic cloves - minced
  • some chicken broth - probably less than a cup
  • some sea salt
  • a bit (less than the salt) of soy sauce
Directions:

In a pan, on medium heat, cook the garlic in olive oil until you can smell the fragrance coming from the garlic. Then dump in the tofu. Put the lid on the pan. After a couple of minutes, add the sea salt, soy sauce, and chicken broth; stir and cover. Give it a few to several minutes more with the cover on to soak in the flavors. Ready to eat.

We eat the stuff with rice. The girls LOVE it.
